Greek Quinoa Salad - 1c uncooked quinoa / 1c diced tomatoes / 1c diced cucumber / 1c feta cheese / 1/2 c sliced kalamata olives or 3/4 c sliced black olives / 1/4 c diced red onion / 1t chopped mint / 1t chopped parsley / 1t fresh dill / juice of 2 lemons (3-4 tb) / 2 tb olive oil / salt & pepper to taste
Quinoa stuffed peppers - vegetarian. These turned out pretty good - but I think they need more spices next time around.
