Herbed Potato Salad (No Mayo) 1 1/2 lb Yukon gold or red skin potatoes, halved - 1T white wine vinegar - 1T Dijon mustard - 2T extra-virgin olive oil - 1/4c fresh parsley, chopped - 1/4c fresh dill, chopped - s&p to taste. Place the potatoes in a large pot of cold water and bring to a boil. Lower the heat, and simmer for 12-15 minutes, until the potatoes are just tender. Green Beans, Chicken Breasts and Red Skin Potatoes
~Zesty Chicken, Potato, and Green Bean Bake~ 9x13 pan, cut 3 boneless chicken breast in half, add 2 cans of green beans on one side, and cut up red skinned potatoes on the other side. Sprinkle a packet of zesty Italian dressing mix on top. Drizzle 1 stick of melted butter (i added some honey and seasoning to the butter) all over it. Cover with aluminum foil and bake at 350 for 1 hour.
