Four Tips: 1. Make sure the bulb is tight. Your cloves should not be visible. Period. Your cloves shouldn't have a lot of space or really none at all for optimal freshness. 2. No blemishes, especially on the bottom by the threads. This will show the aging of the bulb. (Check my YouTube video) 3. Skin is key! It should be smooth, dry and papery. No moisture. Not cracking and peeling. Another sign of aging. 4. Last but not least... it shouldn't smell to garlicky. It should be neutral in scent.
