Are you ready? One pot Cajun Alfredo. Oh, this is a good one. Big flavor, pasta in a spicy cream sauce. Takes no time at all to whip together. Talk about all my favorite things in life. So, this is a chicken dish and I'm taking the chicken out of the pan for a little bit. These are boneless, skinless chicken thighs and all I did to season them was sprinkle on salt, pepper, and some premade cajun seasoning. So, I'm not going to do anything to the pan. I'm going to add the veggies veggies right in so they will cook in all that amazing chicken flavor. So, the veggies I'm adding are diced onions and diced bell pepper. I did a mix of orange and yellow. So, I'll stir those to get them coated in all that yummy chicken flavor. I'm also going to add some minced garlic Oh, this is such a good recipe. Okay, I'm going to season the veggies. There's Cajun seasoning on the chicken and all over the veggies and just for a little freshness, I have fresh oregano that I minced and I'm going to stir to get the veggies all coated in the seasoning and I'm going to let them cook for just a few minutes until they start to soften. The veggies are looking quite delicious and miraculous. So, I want you to look at the pan right now. The heat is so high and look at all those bits in the bottom of the pan. So, that means it's time to deglaze and this is my favorite ingredient to do that. Just white wine and as soon as it hits that hot pan, magic starts to happen. So, I'm actually going to go in with a whisk just so I can scrape up all of those bits on the bottom of the pan because you want those to become part of the sauce. That's where so much flavor is and you don't want it to stay stuck to the bottom of the pan. Okay and that wine has already reduced probably by about half. That pan was so hot. So, I can move forward with couple of other ingredients, just regular old chicken broth and this is a One pot Cajun pasta. So, the pasta is actually going to cook in all of this liquid. Love one-pot dinners. Whole bunch of heavy cream. This is sort of based on an old Cajun chicken pasta recipe I used to make but it's got an Alfredo spin which is really popular among my cheese-loving children. They got that from their cheese-loving mother. Okie doke, the sauce looks great. So, speaking of pasta, that time has come. I'm using fusily which is probably one of my top five pasta shapes. It's dried and uncooked which is the same thing. Stir it around and then I'm going to turn the heat to a simmer. Put the lid on the pot which is important and I'm going to give this exactly 10 minutes and I promise you that pasta will be perfect. Okay, it's been 10 minutes and 3 seconds. I mean, 4 seconds. I mean, 5 seconds. I could go on and on but look at this pasta. My word. So, I'm not quite finished. I have a couple more things to add. Parmesan of course because this is one pot cajun Alfredo. You can use the powdery grated Parmesan or I'm using more of a shredded situation and I also have a bunch of fresh parsley. So, I'll save a little bit to garnish with at the end. So, one more big stir and while it finishes cooking, I'm going to slice the chicken and arrange it on top of the pasta in the skillet. So, I'm going to slice the chicken. Wish me luck. Okay, I put the sliced chicken on top of the pasta. So, I'm going to garnish with more of the parsley 'cuz it makes it look pretty, some shredded parmesan, have a little bit left and because this is a Cajun pasta dish, I'm going to grab the hot sauce and just shake a few shakes on there. No time for dinner. No problem. You've got one pot Cajun Alfredo in your life. You are going to love it.
