However, the leaves of the red raspberry plant have many benefits too! 🌱

They are a great source of iron and antioxidants, and are often brewed as a herbal tea which has traditionally been used as a diuretic, to help balance hormones, relieve menstrual symptoms and even to ease childbirth. 😊

The leaves from summer fruiting varieties are best harvested in spring before the energy of the plant is directed into producing and flowers and fruit, although they can be harvested at any point throughout their season.

- 1 sheet of puff pastry (about 400 grams or 14 ounces), thawed if frozen
- 3 ripe bananas
- 3.5 ounces (100 grams) of chocolate (you can use Kinder chocolate or any other milk chocolate)
- 1 egg, beaten (for egg wash)
- Additional chocolate for decoration, if desired

Instructions:

1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line a baking sheet with parchment paper.

2. Peel the bananas and cut them into small pieces. Break the chocolate into small chunks.

3. On a lightly floured surface, unfold the puff pastry sheet. Using a knife or pizza cutter, cut the pastry into 8 equal squares or rectangles.

4. Place a few pieces of banana and some chocolate chunks in the center of each pastry square.

Tu presses une énorme orange (150g de jus)
Tu mélanges avec 2 cas de chia
Tu laisses prendre 15 min 
Tu mets dans 6 moules en silicone
Tu congèles 1 à 2 h
Tu fais fondre 100g de chocolat dans 20g d’huile de coco (mais tu n’as pas besoin de tout c’est juste plus facile pour tremper les disques)
Tu trempes dedans et tu conserves au frigo ou au congélateur (dans ce cas sors les avant pour que l’intérieur ramollisse)

Celebrate the new season and bring a taste of spring to your table!

Cordial 🌿
15-20 elderflower heads, gently washed
Zest and pulp of 2-3 lemons
1 liter of water
500g sugar
25g of citric acid (optional preservative)

Tempura 💮
10 elderflower heads
Tempura batter (50g rice flower flour, 50g all porpusee, 150ml ice-cold sparkling water, pinch of salt)

Reduce for a syrupy consistency like mine.. 
Syrup Uses?? 🍶

Stir into cocktails or homemade drinks for a floral touch, I used it with my Sprite Kefir

Drizzle over pancakes, vanilla ice cream or any dessert really.
Use as a base for fun glazes

Mixa vinbär och banan till en slät smet
Bred ut på plåt klädd med bakplåtspapper. Det här receptet brukar bli lagom till två normalstora plåtar.
Låt torka i ugnen på 100 grader i 2-3 timmar
Klipp i lagom längder och dra bort bakplåtspappret.

1/2 cup peanut butter
1/4 cup sweetener, to taste ( I used allulose)
1/2 cup sugar free chocolate chips, melted

How to make them: 
1. Mix your peanut butter, yogurt & sweetener. 
2. Freeze on a parchment lined sheet, shaped into a few circles, with a popsicle stick inside.

Ingredients:
- Rice papers
- Edible flowers and fresh herbs

For the sauce:
- Soy sauce: 4 tbsp
- Lime: juice and zest from 1
- Maple syrup: 2 tbsp
- Chilli flakes: 1 tsp

For plating:
- Mango cubes
- Raspberries
- Carrot cubes
- Fresh basil leaves
- Peanuts
- Olive oil

Method:

1. Soak rice paper in lukewarm water for 2-3 seconds and transfer to a cutting board.
2. Layer with flowers and fresh herbs, add another sheet of rice paper, repeat the layering and finish with a final sheet of rice paper.
3. Cut into long pasta-like strips.
4. For the sauce: Combine soy sauce, lime juice and zest, maple syrup, and chili flakes.
