This was my favorite dessert growing up at Thanksgiving. My mom made this every year for me. The combo of the sweet & tart is just so good & after a heavy Thanksgiving meal it’s a nice light treat. Although Joe said since “salad” is in the name-you can eat it before dinner lol! I took this classic recipe and made a twist by making my own jello using Lakewood Organic cranberry juice. Their juice is my favorite option for making homemade jello. The flavor is next level good! Ingredients: 1 1/2 cups Lakewood Organic Cranberry Juice, COLD, 1 ½ cups fresh or frozen cranberries, 1/4 cup sugar, 1 envelope unflavored gelatin packet, 20oz can crushed pineapple, 1 cup pecans, chopped, 8oz whipped cream. Drain the excess pineapple juice from the pineapple and save the pineapple juice. Place a medium size saucepan over medium heat and add the cranberries, 1 cup of the juice to the pan. Once the sides start to bubble, add the sugar, stir and cook for 5-8 minutes. Once the cranberries start to soften/burst, turn off the heat. Set aside. In a large mixing bowl add the 1/2 cup of cold cranberry juice, the crushed pineapple juices and the unflavored gelatin packet. Stir and let it sit 2-3 minutes, stir again. Add the warm juice to the cold juice and stir. Cover up the bowl and place in the fridge for 2-3 hrs until almost completely firm. Remove. Add the crushed pineapple, pecans to the bowl and mix up. Then add the whipped cream and fold.
