The word Paella comes from the name of the container in which it is cooked. It is a flat, shallow pan with two handles, made of iron or stainless steel.Traditionally, paella is cooked outdoors and if possible with orange tree wood. Using this “king of woods”gives the paella a certain aroma and provides a constant, controllable fire. When making paella it is very important to control the fire because sometimes we have to revive or to calm the fire at different points during cooking.
