Blueberry pound cake
Once cool I drizzled the loaf with a simple powdered sugar and blueberry juice icing (you want the icing to drizzle off the spoon easily), fresh blueberries, and sliced almonds. It was extremely moist and super yummy. I bet you could use the mix as a base to add any fruit you want (Strawberries, raspberries, pineapple, coconut, apple cinnamon, etc...).

Lemon Bread. **I follwed this recipe exactly, only leaving out the dried cranberries or blueberries and I didn't make the glaze. I used freshly squeezed lemon juice and still found the lemon flavor to be lacking. This is a dessert bread, rather than a good breakfast bread. It reminds me of poundcake.**

Blueberry Bread (from scratch) - 2 eggs, 1 cup of sugar, 1 cup of milk, 3 tbs. of oil, 3 cups of self-rising flour, 1 cup of blueberries. Beat eggs and sugar. Add milk, oil, and flour. Fold in berries. Spray loaf pan. Bake at 350 degrees for 50 – 60 minutes.

Blueberry Quick Bread - This is in my oven now in mini-loaf pan size. I used real sugar & fresh blueberries. I did NOT use: * pineapple, nuts, or coconut -------------------- Was very good. Next time I won't use so many blueberries. It was not too sweet the way I cooked it (I don't like overly sweet breads). I may try the coconut & pineapple next time. but we liked it the way I made it :)
