James Beard created this version of the British classic, also known as Christmas pudding or figgy pudding, for Gourmet's 1963 holiday issue. Six decades later, we still love it. Flambéing tableside is exciting but not for everyone, so feel free to skip that step and sprinkle the finished dish with white or brown sugar. Beard served his plum pudding with crème anglaise, but you could swap it for hard sauce / brandy butter, or even some store-bought vanilla ice cream.
