Potato, Poblano, and Chorizo Tacos - NOTES: Quite good! A few changes for next time: 1) use a medium potato, not a large (want to taste the chorizo more), 2) try to cook the corn separately so it can get blackened = chewier, 3) flour tortillas taste better with this than corn, 4) prep took surprisingly long, so chop onion/garlic, roast poblanos, and cook chorizo ahead next time.
