Chicken-Stuffed Cubanelle Peppers I made these and they were awesome!!! I modified a bit by using poblano peppers and only added 1/4 cup of bread crumbs then topped them with Parmesan cheese!! Awesome and each paper was about 225 calories.

Stuffed Cubanelle Peppers. Mix ground chicken breast with sauteed diced garlic, onions, celery, corn and peppers and stuff the cubanelles with the chicken mixture. Bake at 375 for 25 minutes. Top with shredded Italian cheese blend and bake an additional 5 minutes. Serve with or without marinara sauce.
