LEMONGRASS, dragonfruit, thai basil, finger lime. This molecular gastronomy dish by chef Grant Achatz @ Alinea in Chicago. It's a refresher served in a glass tube, which is meant to be drank in one shot. Inside the tube on one end is key lime gel with distilled lemongrass, cucumber and micro basil, and on the other end there is some dragon fruit. The lime gel and dragon fruit on each end serve the purpose of holding the liquid inside the tube. Very innovative.
