Make your own tortilla chips with no oil. Preheat oven to 350F and line a cookie sheet with parchment paper. Cut corn tortillas into triangles and place on prepared cookie sheet. Bake 8-10 minutes or until crisp, but be careful not to burn. The chips also crisp slightly as they cool. Sprinkle with seasonings before baking, if desired.
Make a taco bowl using the underside of a muffin tin. Place the corn tortillas on the underside of the muffin tin and heat in the oven for 15 minutes at 375°F. In a large skillet, brown ground beef and add taco seasoning according to package directions. Place corn tortilla bowl on a plate. Fill with desired amount of shredded lettuce.
