Roasted Okra Masala      1 pound small, tender okra     1 medium onion, chopped     1 pinch baking soda, optional     1 teaspoon ginger root, minced     2 cloves garlic, minced     1/2 teaspoon cumin seeds     1/2 teaspoon turmeric     1/2 teaspoon garam masala (the recipe I use is here)     1/2 teaspoon red pepper flakes (or to taste)     1 teaspoon Maldon or kosher salt, optional
