Eggplant, baked not fried. Marie's comments: The only change I made was to use cooking spray instead of using/drizzling olive oil. I liked this, but it needed flavor. I'll make this again because it's good and easy, but I'll season the eggplant itself and the egg mixture. This isn't the greatest recipe, but it is worth trying.
“Better than Fried” Eggplant Parmesan appetizers. So great! I served this with fresh pasta and marinara. --- Easy and rather quick to make. Sometimes I make little eggplant fries for snacks to dip in marinara. Personally, I like to peel the eggplant before cooking them up.
Oven Fried Eggplant- these turned out super yummy! I did soak the eggplant slices in milk first (~1 hr) and reduced the heat to 400 degrees F and the time to 10 minutes for the second side (after 12 minutes the cheese was burning). Delicious!
