Coconut Cream Dessert

Almost Mrs. Vargas Coconut Cream Dessert. Hers has 3 packages of instant coconut pudding (4 serving size) and one cup milk and NO coconut and NO coconut extract stirred in pudding mixture. Her recipe also calls for 60 Ritz crackers (about 3 sleeves) and 1/2 cup butter for crust. She does not freeze hers. It is better just refrigerated overnight. NOTE: ice cream no longer comes in 1/2 gallon size so use 1.5 quart size ice cream plus 2 cups from another container.
