Put beet juice into saucepan. Place beets, onions, & eggs into a large bowl Pour sugar & vinegar into the saucepan with beet juice & bring to a boil. Reduce heat to LO. Let mixture simmer 15 minutes. Pour mix over the beets, eggs, & onions. Seal the bowl & refrigerate 3+ days. The longer the better.
