This is so delicious! Served with a crusty piece of bread, it's perfect for lunch or dinner. Allowing the flavors to develop in the Pepper Stew makes for the most delicious and flavorful stew. The fact that it's vegan will escape your notice as it's a perfectly meaty combination. I've made it substituting the potatoes with taro, rutabaga and also turnip and I prefer potato.
