Speculaaskoekjes van banaan - ■2 bananen ■75 gram kokosolie/ vloeibare boter ■70 gram kokosmeel ■1 eetlepel speculaaskruiden of kaneel ■snufje zout Verwarm de oven voor op 175C. Pureer/mix de bananen + kokosolie, mix het tot geheel tot een gladde substantie. Voeg de kokosmeel + speculaaskruiden + zout toe.Draai van het deeg kleine balletjes. Duw ze een beetje plat en leg ze op de bakplaat. Bak de koekjes ongeveer 20-25 minuten tot ze lichtbruin zijn.
