Taiwanese Beef Noodle Soup (牛肉麵) _ With beef shank, beef marrow bones, fermented bean curd, green onions, & baby bok choy. Place noodles in a bowl & top with beef shank, bok choy, & chopped green onions. Ladle the broth-sauce over the noodles. Drizzle some hot chili oil over top. This is the noodle soup of my people.
