HOW TO PREPARE PUMPKIN SEEDS

Ingredients 1 cup flaxseeds 1 cup boiling water salt 2 cups mixed seeds, such as pistachios (tree nuts are especially nutritious!), or pumpkin, sunflower, etc.  ~4 tbsp EVOO   Heat oven to 400F. In a bowl, add flaxseeds, boiling water, and salt. Mix to egg white-like consistency. Add 2 cups of assorted seeds. Add a touch of salt as needed.  Lightly grease a half sheet pan with oil. Line with parchment paper. Add oil on top of paper to coat the whole pan (use brush to spread).  Add seed mixture evenly on the pan, with an even layer. Using a pastry brush, add the remaining oil on top of the seed cracker mixture.
