It is a little different than fresh mayonnaise, not quite as smooth and much more eggy (as you may expect) however it tastes delicious and would also make a lovely dip over the Christmas period.

3 Hard Boiled Eggs
70ml Olive Oil
45ml White Wine Vinegar
1 tsp English or Dijon Mustard
A Pinch of Salt

Add all of the ingredients to a blender or food processor and blend until smooth.
Store in an airtight container for up to a week.

Just blend 4 hard boiled eggs, 2-3 Tbsp spicy brown mustard, 1/2 cup water, splash of ACV, and a pinch of sea salt (add collagen for an even higher protein count! - ask me what my fav brand is if you’re curious).
