Italian Beef Stew - one of my favorite recipes!  Subbed stew meat (Costco has some really good, lean options), a can of whole tomatoes, chopped & used the juice in place of the water.  The fresh basil really makes it.  Yummy by itself with a warm, crusty baguette.  A little labor intensive, but worth it! #Soup..I added zucchini and mushrooms and carrots.
