Spinach Artichoke Dip
Heat a medium sized skillet over medium- high heat. Once the pan is hot add the extra virgin olive oil. Once the oil begins to simmer add the chopped artichokes and cook for 1 minute. Stir in the spinach, hummus, yogurt, vegetable broth, salt and crushed red pepper. Cook until the mixture is hot. Turn off the heat. Top the mixture with the cheese and broil until the cheese is melted and golden brown. Serve with tortilla chips and/ or crostinis.
