Ginger & Spring Onion Egg Drop Soup: Quick, tasty, and healthy, too! I busted out my Veggie Spiralizer & made zucchini and carrot "noodles" for the soup. I also used low sodium chicken broth & soy sauce, plus only egg whites, to make this soup extra healthy. Next time, I'll try upping the amount of egg whites from 4 to 6, as I did wish there was more egg in the soup. Will definitely make again!
