Pour over foamed egg whites and whisk till cool. (Italian meringue case is dehydrated at 93 degrees till crisp) Mint crème Patissiere: 4 egg yolks 60g caster sugar25g plain flour 2 tsp cornflour 280ml milk 1 bunch mint Whisk Eggs, sugar, plain flour & corn flour till thick and pale. blanch mint then place in cold water. Heat milk then add the mint. Blend then pour over the egg mixture. Whisk over medium heat till thickened. Straw
