Roasting veggies in a single pan is so easy. It’s also a good way to use up spice mixes in your cabinets! First wash and chop a head if cauliflower. Add everything except cheese into a mixing bowl and stir until evenly coated.

Preheat oven to 425 F and line baking pan with foil for easy cleanup. Spread the cauliflower on the pan and bake for 15-20 minutes until edges are golden brown.

When it’s ready- taste a piece to double check! Then top with cheese and add extra salt or pepper if needed and enjoy!
