I made "skinny" chicken spaghetti. Quinoa pasta, 1 lb shredded chicken, 1 c Greek yogurt, 1 can 98% fat free cream of chicken, 1 can Rotel, and 1 cup reduced fat shredded cheese! Cook the noodles for about 3 minutes just to get them limp, mix all ingredients together and put in oven covered at 350 for 45 minutes. Stir and replace cover after about 30 minutes. Not the "cleanest" recipe but Delish! 253 calories for 1/8 of the pan. 22.3 g of protein and 4.8 g of fat!
