coconut curry pumpkin soup - this was a delicious and super easy dinner! I used 2 cups of pumpkin puree and a carton of College Inn's coconut curry broth, and just added some onion, garlic, ginger, curry powder and a touch of orange juice.
Roasted Cauliflower & Cheddar Soup - I loved this soup! I roasted the cauliflower a day ahead of time so it came together quickly for dinner. I took it for lunch for a few times and it reheated well. I'm thinking about making some to freeze.
