Recipe: 1 egg, 1/4 cup GF oat flour, 1.5 scoops whey protein (vanilla or cinnamon roll is delicious), 1/2 cup mashed banana, 1/8 cup non-dairy milk (as needed), 1 tsp vanilla, 1 tsp baking powder, 1/2 tsp cinnamon. Combine all ingredients and cook over medium-low heat until small bubbles form, then flip! Served mine with sugar-free syrup and fresh fruit.
