Coconut Flan--1 c. sugar, 1/4 c. water, 2 (13.5-oz) cans coconut milk, 1 (14-oz) c. sweetened condensed milk, 3 eggs, 2 yolks, 1 lime, zested. Combine sugar & water to make caramel. Pour into 9-in. cake pan. Let cool. Blend remaining ingredients. Pour into pan. Bake at 375 for 1 hr in water bath. Garnish with toasted coconut flakes.
