We're still dreaming of @tatyananesteruk's Tomato Basil Pasta — so we made it ourselves! // Cook 1/2 lb penne pasta al dente. Simmer 5 diced garlic cloves & 1 small diced shallot in a drizzle of olive oil till garlic is soft, then add 1/2 c white wine. Heat till reduced by half. Stir in pasta, coat. Remove from heat, stir in 8 oz fresh mozzarella, 1-2 large diced tomatoes, small bunch chopped basil, & 2 diced green onions. Dress with 1/4 c olive oil & balsamic vinegar & serve warm.
