Ingredients:   

 ½ fresh lemon

 6-8 fresh mint leaves

 4 ounces peach simple syrup

 4 ounces Cooper’s Craft Barrel Reserve

 Fresh ice
1-2 ounces ginger beer

 Peach slices and fresh mint sprigs for garnish

Squeeze the juice of half a lemon into a cocktail shaker.

Add fresh mint leaves, peach simple syrup and Coopers’ Craft Barrel Reserve. 

Add ice to the shaker and shake to combine.

Add crushed ice to a rocks or collins glass and strain cocktail shaker mixture over the ice.
