Clean Eats: Quiche Muffins - 4 minced green onions, 2 shredded carrots, 1/2 minced red bell pepper, 1/2 shredded zucchini, 14 egg whites, 4 whole eggs, 1/2 t basil, 1/4 t oregano, sea salt & pepper. Preheat oven to 375. Coat muffin tin with OO & fill 2/3 full with mixed veggies. Whisk eggs and seasonings in bowl. Pour 1/3 c egg mixture in each tin. Bake 30 minutes or until muffins are slightly browned. Muffins will keep 1 week in fridge. Can also freeze & thaw in fridge before eating.
