Thai Fried Quinoa - delicious!! Modifications: I used a whole can lite coconut milk (about 1&3/4 cup) and the rest broth to equal 2 cups liquid. I found this made the quinoa need to cook a bit longer. Also, I subbed corn for peas cause I don't like peas. And probably more like almost 1 lime of juice.

Thai Fried Quinoa A: Yummy! Add chicken or shrimp for additional protein. I added more eggs. It's like fried rice but with quinoa. Love how the coconut milk gave the quinoa the Thai flavor.
