Chicken Meatballs: 1 lb. ground chicken, 3/4 c. breadcrumbs, 2 TBS. sundried tomato pesto, 1 tsp. garlic, 1/2 c. goat cheese, crumbled, 1/4 c. chopped parsley, 1 tsp. salt, 1/4 tsp. pepper -- Mix all together, adding more breadcrumbs if needed to bind. Roll into ping pong sized balls and bake on lightly (olive) oiled baking sheet at 400° for 20 min.
