Back-to-School Frittata Cupcakes 5 eggs ¼ lb sliced Ham, diced ½ C grated or shredded cheese 1 C fresh chopped spinach ½ tsp olive oi. Line bottom greased muffin tin with a whole piece of sliced ham—forms a cup. Cut off any extra ham and add to the egg mixture. Pour the mixture into the ham cups Place the cupcake pan into the oven and bake at 350* for about 15 min., until the cupcakes look firm and have set. Let cool then pop the frittatas out of the tins.
