Ingredients

Ingredients
* 4 roma tomatoes chopped
* 2 cups flat leaf parsley finely chopped
* ½ cup mint leaves finely chopped
* 2 shallots very finely sliced
* ½ cup couscous
* 1 lemon zest finely grated & juice (to taste)
* ¼ tsp fine salt
* 1 tbsp olive oil (try our Olive Oil AOP Nyons - it provides a delicious fresh taste!)
Instructions
* Cook couscous (½ cup) according to packet directions, then fluff with a fork to separate the grains.

* Combine couscous with remaining ingredients and mix to combine.

* Taste test for salt, then serve.
