Tabouleh - Olive Oil AOP Nyon
• * 4 roma tomatoes chopped
• * 2 cups flat leaf parsley finely chopped
• * ½ cup mint leaves finely chopped
• * 2 shallots very finely sliced
• * ½ cup couscous
• * 1 lemon zest finely grated & juice (to taste)
• * ¼ tsp fine salt
* 1 tbsp olive oil (try our Olive Oil AOP Nyons - it provides a delicious fresh taste!)
• * Cook couscous (½ cup) according to packet directions, then fluff with a fork to separate the grains.
• * Combine couscous with remaining ingredients and mix to combine.
• * Taste test for salt, then serve.
