I would like to take a moment to give a shoutout to the doormen and bouncers throughout the city of Amsterdam. They have a shit job. Seriously. Imagine standing outside in the most commercial and culturally-deprived areas of Amsterdam all night, having to deal with either tourists or Dutch people, both groups some of the worst collectives to provide customer service for. When I came here back in 2003, I was told that they appreciate a tip on the way out. I'm not sure if people still do that…

I was trapped in a microcosm of banality. This marked the second or third day in a row I had eaten an Albert Heijn salad for lunch. It was like going on a blind date with a rich chick-too expensive and not enough flavor. As I moved my jaws out of necessity and habit, a colleague of mine began a tale; evident legends of a better tasting, more fulfilling lunch. He began to describe a place he called Le Fournil; an authentic French bakery in Oud-Zuid. He weaved tales of macaroons, chocolate...
