Chocolate Cashew Buttermilk Banana Muffins

Ingredients: (serves 12)
  • - 1/2 cup of coconut flour
  • - 1 cup of almond flour
  • - 1/2 cup of granulated #monkfruit
  • - 1/2 tsp of baking powder
  • - 1 tsp of cinnamon
  • - 1/4 tsp of cardamom
  • - 1 cup of Kalona Supernatural Organic #lowfat Buttermilk
  • - 2 ripe banana (heated in the microwave for 1 minute)
  • - 1 tsp of vanilla extract
  • - 2 tbsp of melted #frenchbutter
  • - 2 eggs
  • - TOPPINGS: 1/4 cup of cashews mixed with dark chocolate chips
  • Method:
  • 1. Preheat the oven at 350F.
  • 2. Mix all the dry ingredients for the muffins in a large bowl.
  • 3. Add the wet ingredients and mix well until everything is fully incorporated.
4. Pour the batter into 12 silicone #muffins cups and bake for 22-25 minutes.
