easy mac & cheese:
• melt 4 tbsp of butter in a pan over medium heat
• once melted and fragrant, add 4 tbsp of flour and whisk until combined
• slowly add 2 cups of milk and continue stirring
• let the mixture thicken and season with salt, pepper, and paprika
• remove from the heat and add 1 cup of freshly grated cheddar and 1 cup of mozzarella cheese (or any cheese of your choice)
• add reserved pasta water to the cheese mixture as needed
• add cooked pasta into the cheese and combine until creamy
