Pink Grapefruit & Poppyseed Shortbread Biscuits

I was given a couple of pink grapefruit and after making a Bundt cake I decided to make some shortbread too! I love making and eating shortbread and I thought I would combine the grapefruit with poppyseeds in this version. It worked really well and I was really happy with the flavour combination.

The ones you buy in the supermarket here in the UK are usually quite hard in texture. This is my easy go to recipe when you want something with chocolate and quickly!

Coconut Shortbread Biscuits

This is another variation of my popular shortbread recipe and I have kept it simple with the addition of coconut and they are very tasty biscuits! I love coconut in cakes and cookies so I thought why not add it to my shortbread and I was really pleased with the outcome.

These delicious delights are a cross between a cake and a cookie! They have the soft texture of a cake but look just like a cookie. I looked up the definition of cakey as I wasn’t even sure it was an actual word! This is what I found “cak·ey ˈkā-kē variants or less commonly caky. cakier; cakiest. 1. : resembling cake especially in texture.” They are full of zingy lemon and topped with a drizzle of lemon icing as you really can’t have too much lemon in these cakeies. These cookies were a bit of an experiment and are now the most viewed recipe on my website!!! My youngest son says they are the best cookies ever and my blog followers seem to agree. I have to admit I had to try one or two for quality control and my youngest son had to be chief tester too!!! Luckily there were plenty to go round. They have the crusty brownie top and the gooey centre so I was really happy with the outcome and you won’t be disappointed.

l love shortbread and used to buy the squares in Marks and Spencer’s with milk chocolate chips. I had my regular chocolate chips substituted with far superior Belgian chocolate ones so thought I would try and recreate the M&S ones and I think they are pretty near! Shortbread has a lot of butter in the recipe as this is what gives it melt in the mouth texture. It is well worth buying a good quality butter for this recipe as it really does make a difference.
