Cornflake Tart
This is a bake I have been wanting to make for a while as I had some spare pastry I decided to make one. It’s very simple to make and makes a great dessert for all the family to enjoy. It’s another classic school dinner dessert and was usually served with custard - do you remember it from school? It has a delicious shortcrust pastry base, with a layer of jam usually strawberry or raspberry and topped with a syrup and cornflake topping. Cumberland Currant Cake
This is a recipe from my Grandma's handwritten recipe book. I love currant slice or fly pie but this version has rum in it which is synonymous with Cumberland and indeed the port of Whitehaven. As usual there were very few instructions as my Grandma was an experienced baker so didn't write much down except the ingredients and bake in a moderate oven! I have made this on a baking tray (no frills) as there was no tin size mentioned in the recipe and it worked really well with lovely crisp pastr

Almond Galette
The galette des rois is a cake traditionally shared at Epiphany, on 6 January. It celebrates the arrival of the Three Wise Men in Bethlehem. This is a bake I have made for years and I used to make it regularly for a local cafe. They had one customer who enjoyed it for breakfast. I have to say I could eat it anytime of the day as it is full of my favourite nuts which are almonds so it had to appear on my blog! It has a rich almond filling with crunchy flaked almonds encased in delicious puff pastry.

Iced Bakewell Slice
For me any recipe with almonds in is a winner and this recipe will not disappoint. I have used my popular Bakewell tart recipe and topped with water icing, glacé cherries and flaked almonds. This is a delicious almond tart with a nice thin buttery pastry case which not only looks great but tastes it too!!! I have made it in an oblong tart tin so it makes it easy to slice and eat!

Apricot Frangipani Tart
I love making and eating frangipani tarts and I am always looking at new flavour combinations. I think apricots and almonds are such a good flavour combination so this had to be the next frangipani bake! The flavours are quite delicate but work really well together for a really delicious bake. I didn't have any homemade apricot jam so I bought some and used tinned apricots but you could use fresh ones when they are in season.

Egg Custard Tarts
I love an egg custard tart but the episode on GBBO actually put me off baking some as they were a bit of a disaster from what I remember. Well I decided to have a go and I have to say I will never be buying them again! The pastry is my usual recipe and lovely and crispy and the filling is silky smooth with a generous grating of nutmeg to finish. They are best eaten on the day they are made and really delicious with a cuppa for afternoon tea.
