Herb Roasted Chicken by The Pioneer Woman: Pat chicken dry. Stuff chicken with roughly chopped lemon, garlic cloves, and onion. Mix 2 TBS chopped herbs (sage, rosemary, and thyme) with 1 TBS kosher salt,1 tsp pepper, and 2-3 TBS olive oil. Rub chicken with herb mixture. Roast on a baking sheet breast up at 450 for 1 hour to 1 hour 15 minutes until golden brown. Let rest 10-15 minutes.
