Depression Meat Loaf Recipe | Moms Who Think
Depression Era Meatloaf... 1 can Evaporated Milk, 5 slices Bread, ¾ c. chopped Onion, 1½ tsp Salt, ½ tsp Pepper, 2 lb lean Ground Beef, ⅓ c. Ketchup (opt), 3 strips bacon, (opt)... In large bowl, pour milk over bread; Let stand until milk is absorbed. Add onion, salt, and pepper. Stir with fork til bread softens and is light and fluffy. Mix in beef. Shape into a loaf. Place in a lightly greased loaf pan. Top with ketchup and bacon strips (optional). Bake 350°F for 1 hour.
This easy-to-make dish comes from Depression cooking, where a little meat could be stretched to feed & fill up a lot of people, and from the United States military, for the same reason. As an Air Force Brat born to Depression Era parents, it's a given that this dish would be on our table! If you prefer the Chipped Beef version, cut the dry beef into small pieces. Make a roux from butter, flour, and milk, then add the chipped beef pieces after it thickens.
