Pork Vindaloo. Tried 01/18/14. For some reason I was a bit skeptical, but the flavor was very good (this may be my new favorite application for pork loin). And I really liked the brown rice I used (we usually use white Basmati rice and I'm a little bored with it). I even doubled the recipe so that I would have some leftovers for the freezer. My alternations: I used home made short grain brown rice instead of rice packs, and I used fresh onion instead pre-cut. (and I didn't serve okra)
